  • 4 eggs

  • 150g sugar

  • 125g butter, softened

  • 1 tsp vanilla extract

  • 115g plain flour

  • 500ml milk

  • icing sugar (for dusting - optional)

  1. Preheat oven 160'C/Fan 140'C/Gas mark 3

  2. Grease and line your baking tray

  3. Next separate the eggs - whites in one bowl, yolks in another

  4. Whisk the egg whites (or put in a mixer and blend) until egg whites are stiff - place egg whites in a bowl and set to one side

  5. Now combine the yolks and sugar and beat until light and fluffy

  6. Add the butter and vanilla extract and continue beating

  7. Now add the flour and mix well

  8. Slowly add the milk and beat well until everything is combined

  9. Finally, slowly add the egg whites (a little bit at a time) and fold them into the mixture using a spatula

  10. Now you're ready to bake! Pour the batter into the greased and lined baking tray and place in the preheated oven for 60 minutes, or until the top is lightly golden

  11. The cooking time could vary depending on your oven, so check the cake after about 40 mintues

  12. Once cooked, allow to cool and then dust with icing sugar before serving a slice of magic!

You will need

8 inch baking tray - This non-stick one from Masterclass is electroplated and sandblasted for extra durability and features a loose base for easy release. It will take the fuss out of baking and it's available at Amazon for £11.95.

Variations

Chocolate magic cake: follow the recipe above, but instead of using 115g of flour use 65g flour and 50g cocoa powder - you can combine the flour and cocoa powder and follow the same instructions for a yummy chocolate version!

    Made this today, the bottom layer is really eggy in texture and taste but the other two layers are nice, though the sponge at the top was really thin, going to try the chocolate version soon.

    Update on previous comment, took cake out of tin and the bottom was still abit soggy so back in oven for ten minutes. Didn't really have a bottom layer but that could be because I used gluten free flour. I tried this warm and it's more like a pudding than a cake. Will let it cool and try it tomorrow. It's like egg custard.

    Just made this cake and I was amazed that it worked. The cake mixture was just like liquid so really did not expect it to set, but 55 mins later a well set and golden brown cake. Just got to wait for it to cool to taste it. I made this with gluten free flour. Does it need to be stored in fridge once cooled or just air tight container?

    Wish I'd never tried this! It was hard work to make and then ended up being a soggy mess that bubbled over in the oven! Had to bin it in the end - waste of time - such a nightmare cake!
