  8. Bake pecan pie bars for 25-30 minutes or until filling is bubbly and the sides are lightly browned. Cool completely before cutting.

Recipe Notes

I have made these in a 9x13 pan as well for thinner bars. Be sure to reduce the cooking time for the crust and the bars if you make in a larger pan.

Light and dark corn syrup can be used interchangeably in almost every instance, with slight flavor variances. Dark corn syrup, in addition to sweetness, will add color and a more robust, toasty flavor.

How do you keep pecan pie from being runny? ›

Additional tips for preventing a pecan pie that is too runny include: toasting the pecans, properly folding the pecans into the filling, and baking a cold pie.

What is a good substitute for corn syrup in pecan pie? ›

For every one cup of corn syrup that the recipe calls for, use one cup of maple syrup instead. The great thing about maple syrup is it has some nutritional benefits. Maple syrup contains antioxidants, vitamins, and minerals, such as Vitamin B6, calcium, niacin, potassium, and riboflavin.

How do you keep pecan pie from getting soggy? ›

Coating the inside surface of the bottom crust will create a barrier to prevent sogginess. Adding a layer of corn syrup or a slightly beaten egg white before pouring in the filling will form a seal between the pie dough and the filling and will help make the crust crisp and flaky.

What can I use instead of molasses in pecan pie? ›

Swaps and Substitutions
  1. Out of molasses? You can substitute honey or maple syrup. ...
  2. Use dark corn syrup instead of light.
  3. You can also replace the corn syrup with maple syrup, honey, agave, or golden syrup. However, you'll want to add a couple of tablespoons of flour to the filling to maintain that thicker texture.

Why did my pecan pie come out hard? ›

Pecan pie can become hard if it is left in the oven for too long or at a higher temperature than necessary. This could happen due to an inaccurate cooking time, temperature or failing to cover with aluminum foil for part of the baking time.

How to fix a runny pecan pie after baking? ›

One potential risk of making a translucent custard, like pecan pie filling, is that it might not set properly, leaving you with an unappetizingly runny slice. Once you've noticed the problem, the only solution is to protect the crust and pop the pie back in the oven.

Can you rebake a pecan pie that is undercooked? ›

If your pecan pie turns out runny after baking, put it back in the oven and bake for another 10-15 minutes. Cover the top with aluminum foil if it's already browned to prevent over-browning. You can also refrigerate it which will help set the filling.

Is Karo syrup the same as corn syrup? ›

Karo syrup is a popular brand of corn syrup, which is obtained from corn starch that is derived from maize. It is a concentrated solution of several sugars, such as glucose (dextrose), derived from corn starch. Because of various sugars, corn syrup has a naturally mild sweet taste.

Why is my Karo pecan pie runny? ›

A pecan pie is essentially a custard pie, and a liquid center is almost always the result of underbaking. The Karo Classic Pecan Pie recipe calls for baking the pie for 60 to 70 minutes at 350 degrees. In some ovens, however, the pie can take 75 minutes or more.

Why didn't my pecan pie set? ›

Here's the thing to remember: If you're filling hasn't set, it means the bottom of the pie crust isn't fully cooked, either. You can prevent the outer crust from further darkening (or even burning) by covering it with aluminum foil or — more attractively — with what's known as a pie ring or shield.

Which is better light or dark Karo syrup? ›

Karo light and dark corn syrups perform similarly in recipes and can usually be used interchangeably. Recipes usually specify which type to use but the choice may be guided by personal preference. Typically, light corn syrup is used when a delicately sweet flavor is desired, such as in fruit sauces and jams.

Is there a substitute for dark Karo syrup for pecan pie? ›

Assuming that you have both light corn syrup and molasses in your pantry, this is the best solution: Mix three parts light corn syrup and one part molasses. Use the same measurement of this mix in place of the dark corn syrup called for in your recipe.

Is light or dark brown sugar better for pie? ›

Again, if you use dark brown sugar, you will find a stronger flavor and the higher acidity will impact the rise, causing a higher rise or wider spread. That being said, if the recipe only calls for a small amount of brown sugar, it may not impact the final product.
